I fell in love with craft beer when I started to develop my palate in culinary school. Since then I have found a new love for pairing my food creations with quality wine and beer.

Nogne-Imperial Stout and Avery Brewing-Fourteen

Nøgne Ø Imperial Stout
Beer Review:
This beer from Norway pours a dark brown probably black leaving a thick brown head. The body is syrupy and clings to the glass. The aroma is chocolate, coffee, vanilla, earthy hops, herbal in nature. The taste is dry, espresso, dark chocolate, roasted coffee beans, dark, sweet and delicious. This finish is on the dry side, leaving an espresso, chocolate after taste. I'm looking to try more from this brewery.
Food Pairing:
I paired this beer with vanilla ice cream and wafer cookie the chocolate and espresso flavors in the beer played nicely off the creamy vanilla ice cream.

Avery Anniversary Ale - Fourteen

Beer Review:
This beer from a great Colorodo brewery pours a deep dark brown with a bit of light coming through the bottom of my glass. The head is thick tan and everlasting. The aroma is chocolate, coffee, brown sugar, beets, plums, prunes, raisins wow there is a lot going on. The taste starts hoppy, citrus, pungent hops, oily on the palate moving to a brown sugar maltiness airy syrupy on the palate a bit boozey but well crafted.
Food Pairing:
I paired this beer with a stilton cheese that is covered in double gloucester cheddar. The tangy blue cheese and sweet cheddar really brought out the malty caramel character in the beer. This version is a bit hoppier than a earlier version I tried but still great.
